All of the things set in the Setup Wizard can be set individually from within the score. Look at the Palettes tab, the Instruments tab, and Format / Style from the main menu.

You would only want to go back to the Setup Wizard if you had not entered much/any music yet, as that would mean starting over with a blank score.
