Why can't we choose the accidental sign rather than the interval? Or why can't we choose a diminished second (say, A-B-double-flat), a double augmented second, etc.?
So not a feature request at all 😉

Well, a turn to a diminished second is simply repeating the same note. (A and B double flat are enharmonic.)
The "accidental" for a double augmented second would be whatever is more sharp than a double sharp. If there is such a symbol, a) I've certainly never seen it or heard of it, b) it's certainly not used enough to be a normal thing to include in that sort of list, and c) rather doubtful that many musicians would know what it meant.
My $0.02.

"? why can't we choose a diminished second (say, A-B-double-flat), a double augmented second, etc.?"
Well, it's possible for trills (the symbol 'tr' or the wavy line), see:

Isn't F - G-double-sharp a double augmented second? What if the note we're adding the born to is already altered by an accidental sign? Then F-flat - G-double-sharp will be a triple augmented second, and F-double-flat - G-double-sharp will be a quadruple augmented second.

Ok, it's harder than I thought.

Well, first, no one is obliged to respond to messages. This is a forum for volunteer users, not a commercial service, especially as your tone is one of injunction (that's my personal feeling, anyway). If the conversation has come to an end, I suppose it's because anyone has understood exactly what you're getting at, especially in your last post, which must be giving a few of us a headache. What exactly is your project, in real life and as part of a published musical score? You posted two images in your first message, but without any context, just two "turns" symbols.
Please re-post these images (possibly also know the source of this score, in order to date it) providing some context (a few measures including the key signature) and telling us precisely (not a theoretical case) what you want to achieve in the score you are entering.

Sorry if you thought I sounded harsh. But I just wanted to say that you can choose not the interval from the note from which the turn occurs to the upper and/or lower auxiliary sound, but the accidental sign for these sounds. Or add an extended range of different second intervals. I think that could change things.

Or are there any other options?

So is this for playback or for real musicians? Playback is already limited. You can notate all manner of things that Musescore will never play.

Why can trills be allowed a diminished second, but turns cannot?

A diminished second is enharmonic to unison. If trills are allowed to use them, they shouldn't be.

This is true. The photo proving this can be found above.
