Yes, it is easy, although it could be easier. Here's how:
1. Right click a staff next to the instrument name, not on a note, break, time signature etc. but on an empty space in the staff. 2. From the menu that pops up, select Staff Properties.
3. In the boxes "Long instrument name" and "Short instrument name" you can edit the name displayed in the score. Delete the text to remove the instrument name completely from the score.
Ideally, you would be able to delete the instrument names simply by clicking/selecting them in the score and then pressing the delete key, but right now that's not possible.
this may be an oddity introduced in Musescore 1.0. Previous versions would allow you to double click on the instrument name and change it directly - which was very handy.
