MIDI Export
What I'm interested in is the MIDI EXPORT feature. Once I've entered the notes, can it be a single MIDI channel only or give the option to export each VOICE as a separate MIDI file?

Generally speaking:
Exporting a single staff will yield a single midi track, so if you notate each voice on a separate staff you'll wind up with multiple tracks - one for each voice/instrument.
Multiple voices notated on the same staff will be exported to the same midi track.
