That will be a matter of opinion. It will depend on what someone is writing for. And if someone plays any string instruments or has played in an orchestra (to know what they really sound like). Not everyone agrees that there is a one size fits all font. If someone doesn't know how to write for strings than it won't make much difference what font they use.
Personally, I use the default General HQ font. It has several different string sounds and I will switch between them depending on what I want to happen. There are other fonts that in some cases sound better. But MuseScore doesn't always play nicely with them. You'll have to experiment and see what you like.
