midi interface

I have an organ AHLBORN SL250 and I want to create musicscores while playing.
But ofcousre I don't find any documentation, regarding this subjest a,nd I don't succeed.In addition to my question, some months agoo I succeedde to add one note at the time in my musicscore while playing.
