tempo markings
there seems to be two ways off adding these from the palatte or from the text drop down. How does one adjust the tempo from the given 80?

It's the same way as with every other text: doubleclick into the text and adjust the numbers. In the inspector there you can control whether you want to take the number from the text or input another number.
