Very Low and High Notes

I'm trying to create low notes. For example, for a violin, I'm trying to create a low E (lower than the G string G). Also, suppose my second instrument is a viola. Whenever I try to create the E for the violin, it always shifts to move to a high note for the viola. How do I make the low note for the violin without having to delete the viola so that there is space for the violin note?
