measures too spread out, why?
Generally, my measures are too compact, so I spread them out by inserting "breaks & spacers."
In the attached case I am getting only 1 measure per line across the page. I can't figure out why, 2 meas would easily fit IMO.

2 measures can indeed fit, but with all your current style and spacing settings do not automatically.
It's a really small difference, and you can get your desired effect by selecting two measures (I tested with the two first measures of the verse) and reduce stretch once. (Layout → Reduce Stretch)
