Is there any way to change the effect the guitar is playing? Default sounds like something out of Devo.

You can replace the default sounds in Musescore:
http://musescore.org/en/handbook/soundfont
Also, in Musescore, you can adjust the reverb / chorus settings of the mixer and/or synthesizer (found under menu item "Display") .
This is one of the areas which has changed since the days when all playback was with the piano voice.
More progress is in the works with Musescore version 2.
