7 quarter notes in 12/8 time?
Seriously, how is that possible? Maybe my music theory became wack and it's all fine but that doesn't seem right.

Because that measure itself isn't 12/8.
See the small gray + at the top right of the measure? It shows extra beats have been added, possibly using insert mode rather than normal note input mode. Or by joining measures. Or having changed the actual duration of the measure specifically in its properties.
