Beaming of tuplet
I am trying to make a tuplet of 11 notes in the duration of a half note in 3/4, but the resulting notes are all quarter notes, which don't metrically make sense. How can I adjust to 16th or 32nd notes?

Use the "tuplets" "other" option == you want 11 for 16 (there are 16 32nd notes in a half) or 11 for 8 (if you want 16'ths).
