Add new staff, not instrument

I need to add a new staff below the one that I have just populated with notes to continue the music. I have done that by adding an instrument but playback plays all the staffs (actually makes sense for a multiple instrument piece). I need it to play the first staffs I created then start at the beginning of the staff below. I don't see it in the documentation and a search on the forums didn't bear any fruit. That usually means it is so stupid simple nobody else had to ask. I apologize in advance. This is how I created the first staff:
Create new score.
Keyboards, piano
C Major, A Minor Score
Time Signature 4/4
Measures: 6

WARNING!!! I'm not a musician, barely read music (as of about a week ago). Just trying to take some hand written music and get it into this program.
