Hello! How do I separate the 16 bars of the orchestral pauses into 8, 7 and 1 bars?

Usually these are split because of reasons (double barline, rehearsal mark, ..) and MuseScore does so as well. But if you for some reason wish to split a multimeasure rest for another reason, expand it into the individual measures and use measure properties to set "break multimeasure rest" on the relevant measures.

A little more detail would be useful, but let's guess.

You have a multimeasure rest of 16 bars and you want instead to have it grouped as 8, 7 and 1 bars. MuseScore will break multimeasure rests automatically at appropriate points, e.g. key changes, time signature changes, double bars. starts of voltas etc. If you want to break multimeasure rests at some other point first disable multimeasure rests (keyboard shortcut M toggles on and off); then right click in the first bar of your desired new group and from Measure (or bar in UK English) Properties tick the Break Multimeasure Rest box.
