Formatting Problem
I'm sure there is some way to do this, but I've searched for ways and others seem to have the same problem. For my piece, I'm trying to format it to be 8 measures per line on each line, and I'm sure that's an option somewhere, but I just can't find it.

You can use menu item: Format → Add/remove system breaks to break systems (lines) every 8 measures.
Just be aware that you can always place fewer measures than appear by default. Those fewer measures will be automatically stretched to align all the right margins.
However....
You may run into problems if you try to cram more measures than can fit (based on the spacing parameters: minimum measure width, note spacing ratio, and minimum note distance, which are found in Format→Style→Measures).
