I select the key of G Major on a new project and it automatically adds 3 sharps
Ive tried everything, it must be something simple im missing

My guess: You are using a B flat transposing instrument staff. Anyway better attach the file.

If you are writing for a Bb instrument (e.g. trumpet, clarinet) you need to set the concert key to Fmaj.
MuseScore automatically sets the correct key for transposing instruments.
