Option to set default note velocity
Notes are entered with a default velocity of 64. I would like to be able to change that to some other velocity, in the range 0 through 127.

The velocity of 64 is mp, but the default value is mf = 80 unless you specify otherwise. (At least in MuS 3).
So just add a different dynamic to the very first note of each instrument. For example, mp has '64', f has '96' and p has 49.
And you can change these numbers to the range 0 ... 127 when you select the dynamic symbol and open its properties.
