How do I get all the notes to show across the top of my screen, in order to select them to put in my Score?

I guess you mean the note entry toolbar. See https://handbook.musescore.org/customization/toolbars-and-windows for how to show/hide toolbars.
You will be a lot happier if you use a numberpad to select durations. It will take some time to get used to it, but in the long run, it’s a lot faster.
If you’re on a Mac with the short keyboard, a USB numberpad is pretty inexpensive.

Heck! I use the numbers across the top of the typewriter pad and it's a lot faster.

That works too, of course. I’ve just gotten used to right hand on the mouse and numberpad, and the left on the keyboard for A-G.
Whatever you learn first is generally the method of choice.
