When I start a new score musescore asks with what length bar I would like to begin for an upbeat-bar. It hasn't this option for the final bar. So either I create a measure-change and hide the measure, which leaves me with an ugly gap. OR I create a full length bar and hide the rests at the end, which also leaves me with a gap. Any better solutions?

Sure. You can change the duration of any bar without dragging a new time signature by right clicking a measure and change the actual duration. See Measure operations
