Display lyrics without melody line?
I'd like to be able to format some instrumental parts to include the lyrics but not the melody line stave that they are attached to. Is that possible in MuseScore?

Only if the instrumental part has the same rhythm.
Of by some trickery with e.g. text frames or staff text or maybe chord symbols
If the instrument part is not maxed out with multiple voices, here's some trickery...
You can move (exchange) the melody-with-lyrics part into a separate voice (e.g.voice 2) and make invisible.
Then, enter the instrument part into voice 1.

And you possibly need to tweak the stem direction of the notes that remain visible
