Tempo palette is empty
In the latest stable Mac version it seems that the tempo palette lacks of entries.
It's a newly downloaded version.
I don't know what conditions could be causing that.
Mac OS is Catalina, but same thing happened with Mojave.
I'm using two monitors.

I see by the dropdown control at the right side of the toolbar you are in an "edited" workspace, it seems you have customized this? Perhaps you inadvertently deleted the tempo markings. Try right-clicking the palette and choose Reset Palette.

Yes, I tried that before posting this question.
I'm not sure where you find the "edited" workspace flag; do you refer to the three dots? If so, there is an option to reset the palette there, but nothing happens.
Also, I'm not finding where config files reside, to see if there I can change something.

The workspace listing is at the far left of the main toolbar, next to the rest icon, below the camera icon for image capture mode.
Another thought - is this the only palette that looks this way? I notice your icons look huge compared to the text. I can't tell the scale from the image, but it looks like the score might also be bigger that life size - larger than it would appear printed. Do you by chance have something unusual in your screen resolution and/or scaling settings? I know macOS normally manages this itself pretty well, but there are some overrides provided. And perhaps the issue is simply that the palette items are too big for their cells, and the text itself is not in view. What happens if you just pretend those cells are not empty and use them anyhow?
The files for workspaces are stored in a folder that would normally be hidden, possibly called something like ".local" (that's the name on Linux, anyhow).

I see... the workspace you mention is (in spanish) the Advanced Editing one. I don't think I changed that, but it's just what comes with MS.
On the other hand, I also suspected what you suggest, but there's no tempo at all: I cannot "pick" any item (supposedly not seen) because there isn't any. It's behaving like an empty thing because it's an empty thing.
The icons, I think, may look big because I'm working on a MacBook with an external monitor, but that doesn't seem to be related at first sight.
Also, I tried finding the config in the same place you mention (Mac's underlying system is linux-like) but so far I wasn't lucky with that either.

In English at least, it's not "Advanced Editing", it's "Advanced Edited". The workspace normally is just called Advanced, but if you customize it any way, the name changes automatically to "Advanced Edited". To me, it looks like that's what happened. So maybe try resetting the entire workspace - see View / Workspaces.
Do other palettes look normal?
If you right-click one of the empty cells (Ctrl+click, probably, or two-finger tap), do you see a Properties entry? What happens if you click it?

Thanks! I tried all of that, nothing seemed to work.
The rest of the palettes look and work as normally.
As I was writing this answer, I chose the Properties of the palette itself and saw that its width was unexpectedly high; I put a number similar to the rest of the other palettes and now items show up.
But before that, no part of the placeholder was "clickable" so as to understand the items were still there.
