I have a score with SATB voices. Can I change them, for example, to trumpet, alto sax, trombone and upright bass?

Alternatively just set up a new score with the (assumed) 4 voices - setup the instruments on each line - then just copy and paste into the new score.
Using the mixer helps if you want to try out sounds, but if you want to create a new piece with instruments instead of voices, then copy paste does quite well too.
Another way is to CTRL-click on each line in the stave, and change instrument - and once done save or copy the file.
Some voices may need pitch adjustment for different instruments - usually up or down an octave.
