I just got this today- does anyone know if there is a way to change the initial mm to anything other than a quarter note? Say a dotted half or a dotted quarter for example (especially if you're in 3/4 or 6/8)

You can use one of the other tempo markings from the Tempo palette. If you enter the desired tempo in terms of dotted quarter notes into that, it will automatically be converted to quarter note BPM.

Press F2 while editing the text to display the Special Characters palette, which contains all the different note values.

Same story. Note that some keyboards - Mac or otherwise - may require you to press Fn while pressing any of the function keys in order to actuvate them normally (as opposed to having them to something else like change screen brightness). Usually there is a setting in your OS to control this. But anyhow, F2 is the key you would need to activate.
You can also click the icon at far left of the text toolbar to bring up that dialog. And as with most keyboard shortcuts in MuseScore, you can also customize it in Edit / Preferences / Shortcuts.
