Removing rests that are extra to the time signature?
Somehow I have ended up with more beats in a bar than I should have and am unable to remove the extra rests. Any help will be greatly appreciated, thanks.

or use Tools/Measure/Split, the delete the measures.

Select the rest and use CTRL+Delete. See https://musescore.org/en/handbook/3/tools#timewise-delete
To avoid the problem recurring make sure you are using Step Time note input mode. See https://musescore.org/en/handbook/3/note-input#note-input-modes
