No vibrato!
I'm trying to transcribe a piece that has a bassoon playing bass notes with other instruments, but when I write anything longer than a quarter note note it adds this vibrato that makes it sound out of tune.
Is there any way to get instruments to not play a vibrato?

Find a soundfont that was recorded/looped without it. See https://musescore.org/en/handbook/3/soundfonts-and-sfz-files for more info on how to use such a soundfont once you've found it.
I'd be a bit surprised If you find a free font that offers vibrato free sounds. But you never know.
In the meantime here are a few things to think about.
Pan your instruments. Everything will sound better.
Pull the bassoon volume slider down just a tad.
What sounds out of tune on your system might not on some other system.
You will notice that any solo instrument will have vibrato. In the default font, this would be woodwinds and brass. Strings have solo and section sounds. The section sounds will tend to not have any vibrato.
As a result, you should be carful what instruments you mix together. This is true of MuseScore and real players.

Thank you! It already started to sound better once I added more instruments to the mix.
How would you recommend I pan different instruments? I have basically a full woodwind and brass section and strings.

Spread them out. My favorite is like this.
1st violins hard left. 2nd violins right. Double basses hard right. Cellos in between.
Brass spread right. WWs spread left. Percussion center.
Just an example.
