I guess that from the recent update, the piano sound changed. Is there any way I can get the old one back?

You can add the previous sundfont https://musescore.org/en/handbook/soundfonts-and-sfz-files
The old one was FluidR3, which you should be able to find online.

In case of doubt, http://cdn-fastly.deb.debian.org/debian/pool/main/f/fluidr3mono-gm-soun… has the latest version (in the .deb archive as SF3, in the .orig.tar.xz as SF2) of the “old” (2.0/2.1) soundfont.
And http://cdn-fastly.deb.debian.org/debian/pool/main/t/timgm6mb-soundfont/ has the “old old” (1.x) soundfont, in case someone needs it.
