Simple Triplets
Instead of having to put in a lot of triplets, there should be a symbol saying something like "eighth note pair = tripleted quarter note and eighth note". Or I don't know if it's already a thing.

I suggest these images be include by default in the Tempo Palette as they are common.

You mean the swing text in the palette.

I was looking for a way for it to playback with the swing, so I looked in the online handbook and it says to click "Swing" in the text palette. So I clicked "Add" and then "Text", but "Swing" wasn't on that menu. And if that's not the text palette, then I don't know what it is.

Yes, the palettes are displayed using F9. The swing text is included in both the basic and advanced palettes.
