You could use the Inspector to change the notehead group to the "La" shape, which is square. There are other aspects of this notation you might also need to figure out. See https://musescore.org/en/handbook/early-music-features-0 for some ideas.
AFAIK there are notehead schemes (https://musescore.org/en/handbook/notehead-schemes) not available for square notation. So maybe it's necessary to use another application therefore (for example: https://en.wikipedia.org/wiki/Gregorio_%28software%29). But above it's possible to use MuseScore for early music feautures, see: https://musescore.org/en/handbook/early-music-features-0.

Maybe worth for a tutorial/how to or completion of the handbook section for early music ;-)? But in general I suppose there are some missing elements for Gregorian chant music notation.

Elements are missing, they could be replaced with images but the cost/benefit ratio would be disadvantageous. There is Gregorio (http://gregorio-project.github.io/) for the extended scores, my tricks (2.3) are just a pastime.
