Is there any way to make the parts play on their own (if you select piano, you only get piano) or make it so that it only shows the piano?

To play back the score and hear only piano open the mixer (view menu) and deselect all instruments you don't want to hear.

You can also select solo in the mixer for all the instruments you want to hear if it is more convenient. It will "solo" all the instruments you chose.
Given you're posting in the Tech Preview forum. In the current nightlies you'll have to resort to the mixer. It is a known issue #109941: Regression—playback in single part instead plays full score
