Editing the instrument list
I've already edited it in the code, I just don't know how to change the actual application. I use OSX if that helps.

Do you, you've created a new instrument list, and now you want MuseScore to use it? Two options - either save the new one right on top of the old, or else tell MuseScore where you have saved it via Edit->Preferences->General. Either way, I think you need to restart MuseScore.
