I don't understand sounfonts

Ok so I don't get them at all and what I wanna do with them may not be possible (I'd be surprised) but like... How do I put a certain .sf2 on a specific instrument.

I'm on a mac.

Not to the whole score, but one voice or instrument or whatever.
