Every line of my music has a prefix I would rather not have.

May suffice.
But you can create a custom template: http://musescore.org/en/handbook/create-new-score
In the future, since you are basically creating a lead sheet, there are two existing lead sheet templates you can use already. Just check the "from template" option in the first screen of the new score wizard.
Right click and select all similar and delete.
This is an easy one to solve. Once you have chosen your instrument, right click (in Windows) on the staff (not a note or rest) and you will get a context menu that includes "Staff Properties". Click on that and you will find an item (about half way down) that says "Long Name" and "Short Name". "Long Name" is the text that occurs before the first staff or system. "Short Name" is the one that repeats for every other staff or system. If you want "Piano", for example, at the beginning, leave it. If not, simply delete it. If you do not want "Pno." in front of the rest, simply delete it and leave it blank.
If you get rid of the "Long Name" you will lose the first line indent. You have some choices here. I figure that if the piece of music is titled "Something for Piano" that I do not need to indicate that the music is for a piano. If I don't mind loosing the indent, I just leave it as it is (this works well for some quick and dirty transcriptions that I have done to be able to avoid page turns when accompany choirs and soloists (BTW - an 11 page octavo will translate to about 4 or 5 pages of just accompaniment, which can be spread across a piano). I know that I am playing the piano and I do not care to lose any space.
If you want the indent for a more "professional" look, you can add a horizontal frame. The trouble with this, at least in my system (Windows 7), when I render to <.PDF> or (.png), the frame show up.
If I want the indent, I simply right click on the "Long Name" at the beginning of the first system and select "Set Invisible" and I still maintain that indent. You can then do all of this in a template.
