I have extra measures at the end of my composition which ended up as a multi-measure. If I delete the multi-measure I lose the double carline at the end. Can't find any way to re-request the number of measures in the composition. Or to split up the multi-measure into separate measures.

Actually, I don't see any reference to barlines anywhere in Musescore. How would I request, for instance, a double barline at the end of a section?

Under Palettes (Toggle with F9 key), -> Barlines.
Click on the barline on your score, then double-click the symbol you want to apply on the Palettes-> Barlines menu.

To toggle multimeasure rests display, press M.
To force an empty measure to split a multimeasure rest, while they are displayed; open up the measure properties of that measure and tick the corresponding option.
To simply remove the extra/unwanted measures, select them and press Ctrl/Cmd+Del
