creating a new template

Hi, I am writing fir cello octet and i dont want to be tied in by choosing the instruments or clefs beforehand. The top part of the cello will most likely be in treble clef all the time but the middle parts will swap clefs. Can I do this? the only option i can see is to choose instruments on the blank template, or choose pre set ensembles.
