Unmetered Score
Is there a way to create an unmetered score (such as Gregorian Chant). I don't want measures or bar markings.

You can hide barlines, or join measures.

In addition to join measures or or Measure Properties to alter measure durations, also look at Staff Properties to suppress display of time signatures, barlines, etc.
Another possibility is to go to Style>General>Score and enable "Display note values over measure boundaries". You can then go to Staff Properties and disable "Show barlines". The disadvantage of this method is that it doesn't work if you need some barlines (like the section marks in Shoichi's score), the advantage is that you never have to join measures manually.
