vertical staff placement
I seem to not be allowed to create a note more than two ledger lines above or below a staff. This might be because the space between two staves is not great enough. If so, how do I adjust the vertical space between two staves?

You can create notes as high above or below the staff as you like; you just might not be able to to do it by clicking with your mouse. The keyboard shortcuts - which are more efficient anyhow - will work fine, though. So, type a letter name to enter a note, use Ctrl+Up/Down to change octave. Ctrl+Up/Down would also allow you to enter the note somewhere on the staff then move it off.
