Setting up a particular format

So 2 questions:
1) is it possible to write without a time signature? I'm cleaning up some church choir music and well, traditionally, our music is based off old school Byzantine chanting so time signatures aren't really a thing anyway.
2) since we do old school Byzantine chanting type thing, one note might be used for most of a sentence. For example, if we have a line where the next 10 words are all F then we will have the F just once over that passage instead of writing a note for each and every word until different notes are needed (I hope that makes sense). I've not been able to figure out if this program can write multiple words under a single note, especially if the program insists on having a time signature. I tried to upload an example of what I'm aiming for ( i hope it loaded clearly).
Any ideas ?

In version 3 this has been made easier.

To add a note that will not fit in the measure, add it using ctrl+shift+n where n is a note letter. If you end up with extra rests at the end of the measure and your ready to move on, fixing this is equally easy, select the rests and press ctrl+delete (cmd+delete on Mac).

There is also a timewise note entry mode that you can see if you click the N icon on the toolbar. I haven't played with that so I'm not sure how it works yet. It's supposed to allow you to add notes like I'm describing above.

As for the time signature, in each instrument or voice part, right click the staff, choose Staff properties and remove the check from show time signature near the top of the window.
