One note with up and down stems
If I want to indicate that two voices such as soprano and alto will share the same note, C for example, how do I indicate a C with both an up and down stem? I can press the "X" key and reverse the stem, but what if I want both and up and down stem on the same note? I have searched the documentation and cannot seem to solve this simple problem.

This is in reality two notes, one for the soprano and one for the alto. If you are putting the soprano notes in voice 1 and alto notes in voice 2, then this will happen automatically as long as the notes have the same head and same dots.
