You can enter individual notes, or a sequence of individual notes. See

the idea of just playing something and seeing the score appear is currently science fiction.
Sadly, Musescore can't transcribe input from a midi input unless (as BSG said) it's a single note at a time.
My current solution/workaround is to use MidiEditor, MtStudio, or a similar program to record input as a midi file, then I open that midi file in Musescore, and you have sheet music! (kind of)
