I wrote for piano but I want it to be for cello is there anyway to change the instrument without having to rewrite it again?

right-click into staff > staff/instrument properties > change instrument
If it is a grand staff, press I and remove the 2nd staff

How do you do change them on a Mac (you can’t right click on a Mac)

There's a guesture for that, 2 finger swipe IIRC

Ctrl-click should do that trick on Mac

Two-finger press, if I recall (the original; I have two-finger tap bound to that gesture ("secondary click")--- all is configurable in "System Preferences -- Trackpad").
