Forgive me, it looks like I've been living in a cave !! I must have missed all this.

They show musescore.com.
How are they doing this ?

It is a feature offered by the online score sharing platform musescore.com, so best discussed over there.
Basically, you upload your score there, then use the "Send to YouTube" option in piano tutorial mode.
