Fermata time stretch not accurate
There are fermatas on the final notes of the attached score with a time stretch of 2.00. The notes should sound for 8 beats, but are stopping after about 6 1/2 beats. What's going on?

You're playing on a piano, the sound decays. You can notate a single note that lasts a whole minute, but if you play it on the piano the sound will have died out long before that.

That makes sense, except that it's also happening at the end of this track with a Hammond Organ. Am I missing something else?

Ah.. The fermate is applied to the "segment", being the vertical time position of all elements in all instruments. Here that segment is "shortened" by the quarter note in the bottom instrument.
Solutions:
A. Make the last note in the bottom staff also a whole note
or
B. Increase Time stretch to 5 for that quarter note, making that one last 5 beats and thus the total length 8 beats.
