Diff. mixer sound for each voice on staff
Ability to choose staff, then change mixer sound for voc. 1-4 on that given staff
This would be SO nice to see; there is a current workaround, but a painfully long one. Not sure how doable this is, but wanted to request it just for the possibility

Choose an instrument with enough channels (such as the Effect Synthesizer) and place a(n invisible) staff text to assign each voice to a channel: https://musescore.org/en/handbook/3/mixer#mid-staff-change

This can change the mixer sounds (soundfonts) to a voice? Or is that somehting different?

Some instruments have multiple channels, using the mixer you can assign a different sound to each channel.
That staff text technique allows you to assign a voice to a channel of the instrument (and thus use the sound assigned to the channel in the mixer)

So I was hoping to do this for the organ, but I would just set it for the violin, which has four channels, and then change the part name. Is it only the stringed instruments which have multiple channels?

See above - the "effect synthesizer" was specifically mentioned, but also electric guitars, brass, and some other instruments to. Also the "men" and "women" selections in the vocal section. And in any case, even if it starts as a violin or other sound, you can change to whatever you want.
