How can I divide my score in parts that have each its own instruments? (I have a section of the piece where I need S1, S2, A, T, B, then another one where I need just T and B, then another one where I need S1, S2, A, B etc.)

Add all needed instruments, enter the notes, use "Hide empty staves"
