how do I Add Emmentaler to Preferences to make it the default musical symbols font?

Selecting it in format->style, saving it as style and adding this style file in preferences should work: https://musescore.org/en/handbook/3/layout-and-formatting#save-and-load….
Or by loading (C:\Program Files\MuseScore 3\styles)legacy-style-defaults-v3.mss
