I cannot see how to enter a rest.
I cannot select a measure in order to delete it. When I try to select anything, all that happens is a note gets inserted.

Note that a new score is full of rests when it is created, no need to add them, just replace them with the notes you want. That is replace silence with sound.
The Handbook generally has the answer to all such question - looking for "rest" or "select" or "delete", for instance, would show you useful info on each of those topics.
