Long note symbol
How do I get that squared off symbol for long notes which looks like a bed symbol on hotel sites, and which is used in harmony, counterpoint and 16th century music?

The breve and longa are available as duration choices: https://musescore.org/en/handbook/3/note-input#duration
You might need the Advanced workspace for those icons to show up in the note input toolbar by default.

There's also an alternative notehead for the brevis "Alt. brevis", that indeed looks like a bed ;-)
You can get that (on a brevis) via the Inspector and the notehead group
