Trying to make a .MID file of "Bouree" from the first English Suite. However... this is the time signature. How should I be able to change from 2/1 to just 2?

In the Appearance section You will need to have 2 in the Time signature numerator (left hand box) and leave the denominator (right hand box) empty.
Not sure which edition you are looking at that just has a "2", but no need to copy that particular editor's idiosyncrasies. They were publishing music in the 18th century for 18th century musicians who may have been accustomed to seeing that. In the 21st century, you'll just create confusion. Better to stick with modern standards. In any case, how the time signature looks on paper won't affect the MIDI file in any way.
