I have a MacBook Pro with an external 4K monitor.
I'm finding it difficult to read the items in the Palette menus as they are tiny.
Is there a way to increase the size of the symbols in the palette windows?
Also, in the "Lines" window, there is no Prima Volta line without a hook. How can I find a "hookless" prima volta line?

Apply the Prima Volta to your score, then uncheck the end hook for it in the Inspector. See also https://musescore.org/en/handbook/3/voltas for more information about voltas.
But note, that wouldn't be standard. Are you sure you actually want a volta, and not some other more generic line? See the line labelled "Staff" for that, and again, you can customize the hook, as well as the text, using the Inspector. If you explain your special purpose here, we can understand and assist better.
