Playback doesn't work, synthesizer and mixer are greyed out, port audio (in I/O options) is greyed out.

I REALLY DON'T WANT TO BUY SIBELIUS. Im running 10.15.7 MAC intel. I've done a factory reset, redownloaded 4 times, reset PRAM (restarted and clicked command option p r immediately). Something is seriously WRONG.

Assuming you did those things because you were following the instructions in the FAQ article, then most likely, the problem is some other program on your system has requested and received exclusive use of the audio device. I'm not sure if macOS has a way to prevent applications from doing that, but it so, do that. If macOS can't prevent other applications from doing this, then you'll need to go through all your other applications and find out which is doing this, then shut it down.

Ok so I have logic, pro tools and Ableton lite, and some other random apps. if I don’t run any other music applications while I run musescore isn’t it impossible for the other applications to take over the audio device. And by audio device do you mean the physical midi interface I have? Anyway thanks for your reply, I’ll try isolating something somehow and give you an update.

ISTR (but can't immediately find) that for some Mac users there's an incompatibility with one of the packaged libraries in 3.6 and replacing it by the one used in 3.5 fixes it for them.
